This recipe had me at margarita! Ha ha This is a perfect recipe for summer grilling or you can broil it in the oven as well! This recipe is super simple and perfect for my families busy long nights at the baseball field! Get festive with tequila,This marinade gives chicken a tangy citrus flavor with extra kick. (Most of the alcohol evaporates during cooking no silly side effects ha ha!.)

I will also like to add that I marinated this the day before we grilled it so when we got home my husband could throw on the grill quickly! Try it out and let me know what you think! My entire family enjoyed it I paired it with some asparagus and roasted red potatoes 🙂

French onion soup is a type of soup usually based on meat stock and onions, and often served gratinéed with croutons and cheese on top or a large piece of bread.It has always been one of my absolute favorite soups but it's not exactly the healthiest. insert let's make a healthy version and add a twist…French Onion chicken in the skillet! I am sure this could be made in the slow cooker or instant pot as well!

Now to make it gluten-free just use a gluten-free flour or you can omit the flour. I only used it to thicken it up , if you do omit the flour it will be a little more runny but still delicious! I was certain my boys would not want to eat this because of the onions but they proved me wrong! Both boys devoured it and my husband has asked for it to be made weekly lol! I guess this is a winner! try it out and let me know what you think!

Chicken Bruschetta salad super simple and delicious! This I made for myself one day for lunch while kids were at school. It is super yummy , I used left over chicken from the night before and just threw together. I have a chicken bruschetta pasta recipe (Click Here) if you want to make a meal for the family! Both are delicious and simple! Hope you try it out and enjoy!

Also I did  add feta to mine but not enough to count a container if you are following the container system!

Celebrate St. Patrick's Day – or the luck of the Irish every day!! I have been meaning to blog this recipe for a while but had to first attempt in the famous instant pot! You choose whether you want to make traditional corned beef and cabbage low and slow in the slow cooker or fast in the instant pot!! I have tried both methods now and both are fantastic!!!! Try it out and let me know what you think!

some notes about the recipe –

I used Wellshire Farms First Cut Brisket, which has no nitrates, which is why my corned beef isn't pink in color.

I didn't add a lot of salt it the corned beef has a lot in it already

For the crock pot –

Place corned beef in the bottom of the slow cooker. Place the potatoes, carrots, and parsnips around the corned beef, then add enough water to cover the corned beef. Cook on low 8-10 hours or until tender. Add the cabbage wedges during the last 20 minutes of cooking time to avoid overcooking.

Baked buffalo cauliflower bites are a spicy , healthy , vegetarian , delicious alternative to chicken wings! Serve this easy appetizer with carrot sticks, celery and your favorite ranch or blue cheese dressing.Lets be real here I love me some boneless buffalo chicken wings however my waist says different ha ha! This recipe can be made with chicken instead of cauliflower , I have made it both ways I prefer cauliflower because I know my kiddos are getting another serving of veggies! Yep both kids ate these up and loved them! They have grown to love spicy! They both drink shakeology daily as well which I love but its a mom win when they are eating such nutritious veggies!!!

Seriously Addictive! I made these as an appetizer for the playoffs this year and they were so good! We couldn't get enough of them and I loved that I was getting al the Buffalo flavor I wanted but I didn't have to feel guilty about eating a lot of wings because I was eating veggies! Pros: Fast and a yummy way to get veggies! Cons: Not enough!

I have several others on the blog that are delicious these are our favorites! My tip is to look for the riced cauliflower I get mine at costco, but I have seen it at target, trader joes and whole foods!  Or you can rice it yourself I just prefer the pre riced makes life easier!

One of the biggest challenges I had when I was converting my husband to the clean eating lifestyle was Alfredo sauce….His favorite pasta dish is Fettucini  Alfredo , I knew whatever I made had to be dam close or he wouldn't eat it! Early on I made it with cottage cheese and he actually loved it! So did my kiddos! I found a recipe floating around on the web of Alfredo with cauliflower, I was super excited to try it out! If you have been following me for a while now you know I love cauliflower anything!This amazing Alfredo sauce is creamy, rich, and full of flavor, yet it contains neither milk nor cream. How is that possible? Perfect for pasta, pizza, or anything else you might want to cover in white cauliflower creamy deliciousness.The Alfredo Sauce , I make it all the time. I use it in tons of recipes. I spoon-feed it to myself straight out of the blender ha ha I am serious!! So yummy!  I also Suggest using spaghetti squash instead of regular pasta noodles, it is delicious  both ways! I hope you try this recipe out and enjoy it , i know my family did!!

**NOTE** The cauliflower sauce will make 4 cups and you only use 2 or so of it so freeze the rest and save for next time! Or you can make two of these dishes and freeze one! I am a busy sports mom so prep ahead meals make life wonderful and easy!

This Orange Chipotle chicken is by far one of my favorite clean eating recipes. It can be made in the instant pot or a skillet I have tried it both ways and they are equally as delicious! The chicken is great to have leftover with as well, and if you are a meal prep crazy like myself having left overs makes life ten times easier lol! Not only is this recipe delicious its very budget friendly..,. delicious and inexpensive I  know I am speaking love to some! This can easily be adapted to a freezer meal as well , the second time I cooked it I saved the left over sauce in a zip lock baggy for another meal! Totally suggest doing this

My boys loved it without any rice , Oliver enjoyed it in a wrap while Hunter could hardly wait for me to put on his plate ( he was grabbing pieces before) ha ha! My husband enjoyed as a burrito with fajita veggies, so multiple dinners can be made! I have a Cheesy Chipotle Chicken Rice that would taste amazing with this chicken as well! Just omit the chicken from the rice recipe and throw in the chipotle chicken and bam a new meal! The cheesy chipotle rice is one of my 8 year old's favorite meals I make!

I have a couple of tips for making this – prepare all the ingredients before you start cooking this recipe moves fast! also if you want to cook in the instant pot follow the skillet instructions on saute setting , then cook on manual high pressure for five minutes.

This dish is delicious and guilt-free! I also love how easy it is to customize with your choice of protein. It's sure to be a crow pleaser, even for the picky eaters :)The flavors are similar to the traditional dish you can get at any night market or noodle stall in Thailand; there's tamarind paste, eggs, bean sprouts, peanuts, and lots of garnishes

One cup of cooked spaghetti squash only has 42 calories, compared to a cup of cooked pasta with over 200 calories. It only has 10 grams of total carbs, which is 1/4 the amount you get from pasta. You'll also get 9% of the recommended daily intake of dietary fiber, also delivering a range of nutrients, including vitamins C and A, Potassium & Calcium. Spaghetti squash contains a fair amount of fiber,  Fiber also helps with weight reduction as it makes you feel fuller longer.

The fact that spaghetti squash has a lot of potassium makes it the ideal diet for people with blood pressure. It can amazingly lower high blood pressure if consumed over time. The folate contained in the spaghetti squash helps in strengthening the walls of blood vessels besides enhancing blood circulation. Potassium is a mineral that maintains proper muscle and nerve function, and it is also found in spaghetti squash, making it helpful for people with high blood pressure. These bite-sized meatball cupcakes made from spaghetti squash are a tasty alternative to traditional spaghetti and meatballs.As much as I love a big plate of pasta (carbs are my spirit food) I also try to eat them in moderation ha ha! Some people love chocolate I love pasta and bread! Spaghetti squash is a tasty, healthy alternative. As a pasta lover to the core, I found I enjoyed these even more with the squash than I would have with traditional noodles. The squash provides a natural sweetness and tenderness that tastes delicious with the hearty meatball and tomato sauce. My boys thought these were fun to eat like a "cupcake" , they both love meatballs so I knew it would be a hit! The husband enjoyed them as well however I think he would prefer a big plate of spaghetti squash and meatballs lol!

I am an avid slow cooker user so last year when I got my instant pot I knew it was game on! There are so many pros to this useful kitchen gadget , the biggest pro is time-saving! As most of you know both my boys are in multiple sports , I volunteer at the school and am a room mom. The list could go on but I wont bore you with my busy life ha ha! This recipe is adapted from Gutsybynature.com it follows the 21 Day Fix container system, and was one of the first recipes I tried in the instant Pot. Its delicious , and the left overs we used the next day and made street tacos! You can also serve over cauliflower rice, brown rice or enjoy it as it is. My husband loved it as a lettuce wrap in his lunch, very versatile for leftovers! I hope you enjoy!
